My favorite...


Chicken A La Russe

4 Chicken breasts (boneless/skinless)
1 Bottle of Russian salad dressing (Catalina will also do the trick, but tastes different... I'm not much of a fan!)
1 Packet of onion soup mix

- Mix the full bottle of salad dressing with the onion soup mix. Pour over chicken breasts and cook in 375F oven for 50-60mins. Mmmm, enjoy!

Oatbran and Date Cookies

2/3 cups non-hydrogenated soft margarine
1 egg, slightly beaten
1 tbsp water
1 cup whole wheat flour
1 cup oatbran
1/4 cup wheat germ
1 tsp baking soda
1 tsp baking powder
1 cup chopped dates or raisins.

Cream margarine, egg and water together. Add flour, oatbran, wheat germ, baking soda and baking powder; mix well. Stir in raisins or dates. Drop batter by spoonful onto cookie sheets and flatten slightly. Bake @ 350 for 15 minutes. Makes 24 cookies.

*You can add a cup of brown sugar if you like, but raisins or dates whichever you decide to put in are sweet so I find they are good without sugar. And healthier! Cool

Whole Wheat Banana Muffins

1/2 cup canola oil
1 cup bananas (3 mashed bananas)
1/4 cup milk
2 eggs
1 tsp vanilla
2 cups whole wheat flour
1 tsp baking soda

Mix all ingredients together and spoon into 12 muffin cups. Bake at 350 for approx 20 minutes. Cool in tray.

*You may do half whole wheat flour and half white if you want. And you also can add chocolate chips if you want too. Honestly unless you love love sugar like my DH you won't be able to tell that theres no sugar in these, they are sweet I promise you Smile

Oh I know! My mom's pumkin pie. SOO good.

For the crust she buys tenderflake (lard) and there's a recipe right on the box. It's the best ever.

Then, take a whole pumpkin, cut it in half, and scoop out the goop. Then line 2 baking sheets (or one if the pumpkin is smaller) with tin foil. Place the pumpkin cut side down on the tin foil. Put it in the oven at 375 for about an hour or until soft. (poke it with a fork.)

When it's done, take it out. Let it cool a tiny bit. Shave off the skin with a knife. Cut up the rest of teh pumpkin, dump it in a mixing bowl (or 2) and puree.
It will make enough for like 10 pies. Not lying. Freeze the extras in 1.5 cup portions, in containers, once frozen, transfer to ziplocks so you can have your containers back. lol.

THEN
1.5 c pumpkin
...2 tbsp pumpkin pie spice.
2 beaten eggs
2 tbsp flour
1 cup brown sugar
0.5 tsp salt (or a few shakes, whatever)
1.5 cup milk.

mix everything together.
melt 1 tbsp margerine and mix with the rest.
stick it in the (unbaked) shell.

bake for 15 mins at 450, then 30 mins at 350.

Top with whip cream, dream whip, cool whip, whatever you like!

Yup, btw, that was the cookies recipe i was talking about that has only 1 ww pt.

Ok my 2 fave sauces to make from scratch.

Pasta sauce
Score the skin of 6 or so tomatoes
Boil them in water til the skin starts to peel off. More if you want them softer.
Cool them under cold water and peel the skin off. Cut out the stem area if you can.
Throw them in a skillet/fry pan with a tbsp or 2 of oil.
Cut up a pepper or 2 (to taste) and one onion. Crush 3 cloves of galic. I also slice them. Throw in with tomatoes.
Cover and let simmer until everything is soft. Add salt and pepper if you want. I'm pretty generous with the salt.
Puree if you like. I do.
It might look orange but it tastes really good lol.

Mushroom sauce.
Heat up a few tbsp of oil in a fry pan. Add some butter.
Wipe down (washing removes flavour) and cut up a bunch of mushrooms. Maybe 10. Dont use the stems. Throw in pan. Add half an onion if you like. I LOVE it with onion. Simmer until browned.
Make a little space in the middle and add 2 tbsp or so of flour. Add a bunch of milk to almost cover. (Love my measurments?)
Stir and simmer until it thickens. If it doesn't get thick enough add more flour.
Add salt and pepper to taste but it prob won't need much if you used onion!!

what you need
1 pkg. (225 g) Kraft Dinner Whole Wheat Macaroni and Cheese
1 cup each shredded carrots and zucchini
1/2 cup Kraft Part Skim Mozzarella Shredded Cheese

make it
PREPARE Kraft Dinner in large saucepan, following the Sensible Solution directions on package and adding vegetables to the boiling water after 3 min. of the Macaroni cooking time.

ADD mozzarella; stir until melted.
